• 1 whole side of salmon (approximately 1kg), skinless and boneless
• 500g puff pastry (store-bought or homemade)
• 2 tbsp butter
• 200g fresh spinach
• 200g cream cheese
• 1 tbsp fresh dill, chopped
• 1 tbsp lemon juice
• Salt and black pepper to taste
