Roast Goose Recipe with Apple and Sage Stuffing

Serves: 6-8
Preparation Time: 30 minutes
Cooking Time: 3 hours
Ingredients:
For the goose:
• 1 whole goose (4-5kg)
• 2 tbsp salt
• 1 tbsp black pepper
• 2 sprigs fresh thyme
• 2 oranges, halved
• 2 onions, quartered
For the stuffing:
• 3 large apples, peeled, cored, and diced
• 1 onion, finely chopped
• 100g breadcrumbs
• 1 tbsp fresh sage, chopped
• 50g butter
• Salt and pepper to taste

Instructions:

1. Prepare the Goose:
• Preheat your oven to 180°C (350°F).
• Remove any giblets from the goose and pat it dry with paper towels. Prick the skin all over with a fork to allow the fat to render during cooking, but avoid piercing the meat. Rub the goose generously with salt and pepper.
2. Prepare the Stuffing:
• Melt the butter in a frying pan over medium heat. Sauté the onion until softened, about 5 minutes.
• Add the diced apples, breadcrumbs, and sage to the pan. Season with salt and pepper and mix well.
3. Stuff and Roast the Goose:
• Stuff the cavity of the goose with the apple and sage stuffing, along with the halved oranges and thyme sprigs. Place the onions around the goose in the roasting pan.
• Roast the goose in the oven for about 2 ½ to 3 hours, basting it every 30 minutes with the rendered fat. The internal temperature should reach 70°C (165°F) when fully cooked.
4. Rest the Goose:
• Remove the goose from the oven and let it rest for 20-30 minutes before carving. This allows the juices to be redistributed, ensuring tender and flavorful meat.
5. Serve and Enjoy:
• Serve the roast goose with traditional sides like roasted potatoes, braised red cabbage, and a rich gravy made from the pan drippings.
