Serves: 6

Ingredients:
• 800g beef fillet
• 250g chestnut mushrooms, finely chopped
• 100g prosciutto
• 2 tbsp English mustard
• 500g puff pastry (store-bought or homemade)
• 2 egg yolks, beaten
• 2 tbsp butter
• 1 clove garlic, minced
• Salt and pepper to taste

Instructions:
1. Prepare the Beef:

In the same pan, cook the finely chopped mushrooms and garlic over medium heat until all the moisture evaporates, about 10 minutes. Season with salt and pepper and let the mixture cool.
3. Wrap in Prosciutto:
Lay a sheet of cling film on a flat surface. Place the prosciutto slices in an overlapping layer. Spread the cooled mushroom duxelles evenly over the prosciutto.
Brush the beef with mustard, then place it on top of the mushroom layer. Use the cling film to roll the prosciutto tightly around the beef. Chill in the fridge for 15-20 minutes.
4. Wrap in Puff Pastry:
Roll out the puff pastry on a floured surface. Remove the cling film from the beef and place it in the centre of the pastry. Fold the pastry over the beef, sealing the edges tightly. Trim any excess pastry.
Place the wrapped beef seam-side down on a baking sheet lined with parchment paper. Brush with beaten egg yolks and chill for another 15 minutes.
5. Bake the Wellington:
Preheat the oven to 200°C (400°F). Bake the Wellington for 30-35 minutes for medium-rare, or longer if you prefer your beef more cooked. The pastry should be golden and crisp. Rest for 10 minutes before slicing.
6. Serve and Enjoy:
Slice the Beef Wellington into thick pieces and serve with a rich red wine sauce, roasted vegetables, or creamy mashed potatoes.
