Honey-Glazed Roast Gammon Recipe
Serves: 8-10
Preparation Time: 15 minutes
Cooking Time: 2-3 hours (depending on the size of the gammon)
Ingredients:
• 2.5kg gammon joint (unsmoked or smoked, depending on preference)
• 1 onion, halved
• 2 carrots, peeled and chopped
• 2 bay leaves
• 10 black peppercorns
• 1 tbsp cloves (for studding the gammon)
For the glaze:
• 4 tbsp honey
• 2 tbsp Dijon mustard
• 2 tbsp brown sugar
• 1 tbsp wholegrain mustard
• 1 tbsp cider vinegar

• In a small bowl, mix together the honey, Dijon mustard, brown sugar, wholegrain mustard, and cider vinegar until smooth.
4. Glaze the Gammon:
• Using a sharp knife, carefully remove the skin from the gammon, leaving a thin layer of fat. Score the fat in a diamond pattern and stud each diamond with a clove.
• Place the gammon in a roasting tray and generously brush with the glaze.
5. Roast the Gammon:
• Roast the gammon in the preheated oven for 20-30 minutes, basting with more glaze every 10 minutes, until the fat is golden and sticky.
6. Rest and Serve:
